Just wanted to pass along a recipe I got from "Parents as Teachers". It's an easy one to make with kids and really good! Noah and I have already made it a couple of times.
Applesauce muffins
6 TB butter
1 1/2 C flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 eggs
2/3 C brown sugar
1 1/2 C applesauce
1. Heat oven to 375
2. melt butter in micro for 30-60 seconds and set aside to cool
3. sift together flour, baking powder, baking soda, cinnamon and salt into mixing bowl
4. In another bowl, whisk together the eggs and brown sugar. stir in the applesauce and melted butter until mixture is smooth.
5. pour the applesauce mixture over the flour mixture. mix with wooden spoon until combined, dont overmix.
6. fill the muffin cups about 2/3 full, use an ice-cream scoop for less mess. bake 20 minutes or so until light brown
